High Heat Cooking Contributes to Diabetes
Those With Diabetes Should Cook at Lower Heat
Diabetics and prediabetics should avoid cooking at high heat because it produces Advanced Glycation End products or AGE’s. This is totally new to me and is something you may want to consider to help lower your glucose.
It is a little scientific and hard to understand but it turns out that when you cook at high heat, sugar molecules like glucose and fructose bond to a protein or lipid creating AGE’s. This is an uncontrolled non-enzymatic reaction between proteins and sugars that significantly alter the structure and functions of proteins. AGE’s are inflammatory to your cells compounding the stress already on your blood vessels that are associated with diabetes.
AGE’s show up in the blood tests of those with chronic health conditions associated with inflammation like diabetes, heart disease, and arthritis. AGE’s have a detrimental impact on degenerative diseases and ageing.
Research over 20 years has shown that AGE’s are associated with diseases linked with ageing like:
- Heart Disease
- High Blood Pressure
- Kidney Disorders Atherosclerosis
- Skin Disorders
- Visual Impairment
There are two sources for AGE’s the first is from food we eat and the second is from normal metabolism and ageing. To reduce AGE’s from the food we eat it is recommended that food be cooked for a longer period of time at lower heat. It is best to cook at a temperature below 250 degrees F. If you cook at temperatures above 250 degrees F it will introduce between 3 to 10 times more AGE’s. Cooking with water or steaming inhibits the sugars from binding to proteins and producing AGE’s
Some of the recommendations I have seen to protect you from AGE’s are to reduce the consumption of sugar, eat food cooked at lower temperature, consume fruits and vegetables. It is also recommended to avoid high fructose corn syrup which I wrote about in another article that you can see by clicking here.
